From November onwards, the stalls of the markets of Provence take on a whole new look. Gone are the juicy figs and sun-kissed tomatoes. Make way for multicolored squash, Romanesco broccoli, Haut-Var truffles, fragrant citrus fruits from Menton, candied apples from the Grasse region and mature cheeses to perfection. Each season has its treasures: in winter, the cuisine is generous, slow-cooked, and comforting.
